The Big-Flavor Grill No-Marinade, No-Hassle Recipes

The Big-Flavor Grill: No-Marinade, No-Hassle Recipes for Delicious Steaks, Chicken, Ribs, Chops, Vegetables, Shrimp, and FishThe Big-Flavor Grill: No-Marinade, No-Hassle Recipes for Delicious Steaks, Chicken, Ribs, Chops, Vegetables, Shrimp, and Fish by Chris Schlesinger

The best-selling team of chef Chris Schlesinger and Cook’s Illustrated executive editor John Willoughby present a radically simple method of applying flavor boosters to ingredients hot off the grill, maximizing flavor and dramatically reducing grilling time over traditional marinades.

Schlesinger and Willoughby wield spices and condiments from around the world masterfully in these 130 minimal preparation, maximum flavor recipes inspired by Asian, Mediterranean, Latin, and Caribbean cuisine. In contrast to grilling books that require long-lead marinating and time-consuming steps, The Big Flavor Grill‘s no-fuss approach means lightning-quick prep and grill times. Their new take on using spice rubs to coat ingredients before they go over the coals trumps traditional marinating by providing stronger, better-defined flavors–and rubs can be used at the last minute instead of having to think ahead, as with marinades. Willoughby and Schlesinger then take flavor to the next level by tossing just-grilled items with marinade-like ingredients–citrus, hoisin, fish sauce, ginger, basil, fresh chiles–resulting in bolder, more complex dishes and lots of saved time and effort.

My rating: 4 of 5 stars

I liked this cook book, but also noticed that it seems to assume the intended audience has no basic cooking skills, and thought it was perhaps a bit oversimplified for those of us who are familiar with cooking. Still, it has a lot of really easy recipes that can be adapted to your own tastes.

There are many really good photos (they make you hungry) and the recipes are made with things that just about everyone has on hand. I liked they way the cookbook was organised and that there are multiple recipes for other proteins besides beef. If you are on a red meat restricted diet this book will still have plenty of recipes for your family.

The prep time for these recipes is short and the overall cooking time is reasonable. This would be a great book to have a round for backyard BBQ parties or entertaining at outdoor events.

I’d recommend this book for those looking for basic BBQ recipes and some new ideas for how to prepare outdoor meals.

  1. As you say, this sounds like a handy book to have around at barbecue time. I like the idea of easy, tasty recipes. I also like that there are non red meat recipes. Photographs are always well received in cookbooks. In my case they are crucial, in order to see if what I have produced is anything like it should be.

  2. I’ve been wondering how those restaurants concoct those delicious rubs they apply to grilled food. This book will probably tell me. We entertain a lot. I’ll have to try it out.
